Monday, October 4

7: 00 am–12:00 pm	SFM Golf Outing Start the conference swinging and networking with your friends and colleagues at Falcon’s Fire Golf Course - a Rees Jones signature design masterpiece which pays respects to the timeless traditions of the game of golf. Included in your golf registration is a continental breakfast, BBQ lunch, and two drink tickets on the course.
1:30 pm–3:15 pm	Liaison Forum How has the position of the liaison and self operator changed over the past several years? People who concentrate solely on food are now few and far between. The recent financial crisis led many to consolidate responsibilities and now we wear more hats than ever before. In this ever changing environment, how can you be sure that your senior leadership recognizes what you bring to your employer? Are you giving your leadership the right information and measurement tools so they can accurately assess both you and the services you manage? In the past, liaison's and self operators typically spoke in food service specific language with check averages, participation rates etc. To be successful today, you must also make sure you are tying your performance to your employer's goals - ie sustainability, reduced spend, health and wellness, improved technology, real estate strategy retention, employee satisfaction etc. Both your success and the success of your program are linked, how do you make sure that you are viewed as more than the "food person" but as a skilled professional with varied assets that can be applied to many services if called upon. We will explore: how to report and speak to management in their terms expanding your visibility beyond your traditional responsibilities performance matrix beyond typical food service benchmarks assessing your corporate culture and responding to changes

Then please come by and meet members of the Board of Directors, Committee groups, and build your contacts within the industry. You will also get a sneak peak at what to expect during the National Conference and of course food and beverages will be served.
7:00 pm–10:00 pm	Opening Reception: A Coast to Coast Extravaganza at Disney’s Hollywood Studios™ An unforgettable experience awaits…you will arrive in New York City where the sites, sounds, and tastes of the Big Apple set the stage for a special dinner on the Streets of America. As the sun sets in the east, there is still plenty of time to party on the West Coast as a short stroll takes you to Sunset Boulevard for decadent desserts and cool beverages. When you say goodnight you will remember this transcontinental event was filled with energy, excitement, good friends, and good food…all the way from Coast to Coast. Attire for this event is Casual.

Attracting and Retaining Talent in Today’s Environment Today’s economic climate presents different challenges on attracting and retaining high performers. Far greater scrutiny needs to be taken when examining a candidate’s motivation for accepting a position, relocation presents unprecedented challenges due to the housing market, and your “A” players are being sourced through a litany of new mediums. We will discuss best practices that have been adapted to our current market conditions as well as compensation trends within the hospitality industry. Crisis Management: Understanding Food Safety and the Impact of Foodborne Illness on your Operation According to the Center for Disease Control there are 76 million foodborne illness cases in the U.S. each year. Actual or alleged outbreaks can be devastating to your operation. This session will focus on 5 Risk Factors for foodborne illnesses identified by the CDC and will use actual industry case studies to help attendees understand how to minimize their risk and protect their customers.

Bill will share tips including: being agile, recognizing and seizing opportunities, how to distinguish yourself, striving to make each day count, and balancing high expectations with your shortcomings. Bill’s speech is packed with advice that you will be able to apply to your personal and professional lives. Listen to stories from his early days as an entrepreneur, his experiences on “The Apprentice”, and his personal philosophy revolving around hard work and not taking anything for granted.

10:30 am–11:30 am	Educational Sessions The What, Who, and How of Sustainable Food & Beverage As local and federal governments push for standards around sustainable practices and consumers push for the availability of sustainable options in every aspect of their lives, food service professionals must be prepared to meet these increasing green demands. With this burgeoning field come many questions: What sort of regulations are forming around sustainable food and beverage? Are there companies that are green and successful? And, probably the most important one: How can my company be sustainable? Greg Christian–sustainable food service consultant, co-author of sustainable F&B standards, and long-time conscious caterer–will address these questions and more. Create Your Own Crystal Ball Joleen Goronkin will be your career coach as she helps you identify your personal mission, vision, and values, and then teaches you what to do with that information. She will include discussion on our strengths, weaknesses, opportunities and threats. Finally, she will help you create a development plan to further your career, to add value to your organization, or to take steps toward other goals you have. This session will provide tools to help you get where you want to be.
11:30 am–1:00 pm	SF "Emmy’s" Luncheon Get your daily celebrity dish and we don't mean food (but we do serve lunch) at the 2010 SF "Emmy's". This is one of the cornerstones of our business and we are thrilled to announce this year's list of hotly-anticipated winners in categories such as Leadership and Spirit. So, walk the red carpet, you never know who you might run into.
1:15 pm–2:15 pm	Educational Sessions Menu Magic - Smart New Innovations to Invigorate Your Menu How do we improve efficiencies, reduce product waste and our use of energy while focusing on our customers, keeping up with the trends and maintaining a fresh perspective on our menus? Sounds like we need a little magic! With these challenges in mind, plan on attending this "don’t miss" interactive session. The Wizard will wave his magic wand and introduce innovative products and solutions that help operators deliver exciting menu concepts while keeping an eye on the bottom line. Foodservice Contract Language - “Rosetta Stone®can’t teach you this” Have you seen this question in an RFP - “Provide your companies approach to Quality Assurance and how you will validate your performance” How do you turn this into a contractual obligation. In this session we will discuss: Key Performance Indicators – a balance of the needs for the client, contractor and the customer Clear contractual language results in satisfaction for all involved For who, what and when is measurement conducted? The line between customer needs and client or contractor needs Technology has allowed for immediate feedback and measurement of KPI’s What is the new language and how do we speak it? Trends in Foodservice: The Ingredients to Success No recent trend has impacted the foodservice industry more than the dramatic reduction in America’s workforce. As unemployment skyrocketed, visits to both commercial restaurants and many non-commercial segments, namely B&I, dropped precipitously. But there are pockets of success and lessons to be learned. Warren Solochek with The NPD Group will share insights drawn from their breadth of consumer research covering a variety of consumer dining habits and the implications they have for the non-commercial operator.
2:45 pm–4:15 pm	Hunger Awareness Walk: Wilderness Lodge A quick boat ride on Bay Lake will drop you at the Wilderness Lodge and the start of the 2010 Hunger Awareness Walk to help fight hunger – your donation will be used to help the local area foodbank. Explore the flora and fauna of the backwoods along the meandering pathways of the Wilderness Lodge Trail and if you are lucky you may even catch the eruption of Fire Rock Geyser, fashioned after Yellowstone National Park's Old Faithful, with its plume of water jetting 120 feet into the air.
7:00 pm–8:30 pm	President’s Banquet: American Adventure Rotunda, Epcot Much like our fore fathers before us, its time to pass the gavel, from 2010 President, Ann McNally to our incoming 2011 president. The art will not only be on your plate with the culinary gastronomy that is planned but you will also experience some of the finest colonial architecture, featuring soaring domed ceilings and stately white columns in the American Adventure Rotunda. And heck, you can even gaze at 11 countries while you are here and you don't even need a passport. Suggested Attire: Resort Dressy
8:30 pm–10:30 pm	Sweet Endings Dessert Party: Isle de France, Epcot Be transported across the Atlantic and travel the streets of Paris and the provinces of France during an era known as La Belle Epoque, or "the beautiful time." Beautiful gardens, quaint shops and architecture full of character, along with a scaled-down replica of the Eiffel Tower. Delectable desserts and IllumiNations: Reflections of Earth – a fireworks, laser and water show. This party would even have made Napoleon take his hand out of his jacket – MAGNIFIQUE!
